It’s been slightly quieter on the blog over last few weeks. I admit. I think I simply needed a few weeks and in particular weekends to rest, recover and refocus. But here I am again, refreshed, recharged and ready for whatever life has planned (something yummy, let’s hope!).
(Hmm, there clearly must be something special about the letter ‘R’, have you ever noticed that all those positive action verbs start with ‘R’?).
Today, to revitalise the blog, we’ve got a fruity, nutty coleslaw-style salad.
0.5 head small white cabbage
1 crisp apple
2 tbsp golden sugar
Juice of 0.5 lemon
100g dried apricots
25g pumpkin seeds
75ml light mayonnaise
100ml natural yogurt
Salt and freshly ground black pepper
Fresh chives to garnish
Shred the cabbage, coarsely grate the carrot, chop the apple into thin strips and place in a large mixing bowl. Sprinkle with sugar, pour over the lemon juice and mix.
Roughly chop the dried apricots, walnuts and hazelnuts. Stir into the veg and fruit mixture together with raisins.
In a small bowl, mix together the mayonnaise and yogurt. Season to taste with salt and pepper.
Add the yogurt and mayonnaise sauce to the salad and toss together to mix.
Set aside in a fridge for at least 30 minutes before serving.
Garnish with fresh chives.
