One year ago was a very magical day. One year ago we celebrated our love with closest family and friends. One year ago we said ‘Yes, I do’ to each other.

It hasn’t changed anything between us, but then we didn’t expect it to change anything. We didn’t want anything to change either. It has however made our lives even more beautiful. I’m his wife and he’s my husband. We’re happily in love.

OK, let’s not get too romantic (at least on the blog pages…) but it wouldn’t be me if I didn’t mark a day like today with a celebratory recipe. And what could be more special and romantic than a glass of champagne with strawberries and chocolate. Importantly, this luscious dessert doesn’t take long to prepare (overnight soaking aside as it’s worth giving strawberries some time to infuse in champagne), after all, kitchen is not the place I want to spend my day today.

I prepared the strawberries and served them already covered in chocolate, although you could also prepare champagne infused strawberries and dip them in melted chocolate with your other half, using a chocolate founde. I would personally go with dark chocolate, but knowing that my other half loves milk chocolate, the choice of chocolate type was obvious.

Ingredients

24 fresh strawberries
300ml Champagne or sparkling wine
150g milk or dark chocolate, chopped
25g white chocolate, chopped (optional)

Preparation

Wash the strawberries under running water. Pat dry.

Place the whole straberries into a large bowl and pour champagne over to cover the fruit. Let it soak overnight, for at least 12 hours, up to 24 hours.

After soaking, remove the strawberries from the champagne bath and gently pat dry.

Prepare a large tray covered with parchment paper.

To melt the chocolate, in a small saucepan bring about 2-3 cm of water to the boil. Place the glass bowl over the pot, making sure the water doesn’t touch the bottom of the bowl. Place chopped chocolate in the bowl and stir it frequently as it softens over the heat. When almost all the chocolate has melted, remove from the heat and continue to stir until it has melted completely.

Dip the strawberries in chocolate. Place dipped berries on prepared baking sheet to dry.

If using, melt white chocolate following the same steps as previously and drizzle over the chocolate covered strawberries.

Enjoy with a glass of champagne.
