And here we come to the twelfth recipe for this Christmas. A healthy dessert to top the list of this year’s festive dishes. I think this Christmas feast for us, will be a combination of traditional and healthy recipes on the celebratory table. I hope, these days will be very merry and joyful for us and everyone around. And I’m quite sure, there will be plenty of long walks in between the meals!

Ingredients

Makes 6 small tartlets

For the pastry:
300g plain flour
100g sugar
175g unsalted butter
Juice of half orange

For the filling:
200g fresh cranberries
Juice of half orange
150g sugar
15g butter
Whipped fresh cream to serve (optional)

Preparation

In a large bowl mix the flour and sugar. Melt the butter and mix it with the orange juice. Add the melted butter and orange juice to the mixture of flour and sugar and mix all with a wooden spoon making the dough.

Divide the dough into 6. Roll it out on a lightly floured surface. Put the dough in 6 small tart tins with removable bottoms, covering the bottom and sides. Trim evenly with the rim of the tart tins. Prick the dough with a fork and chill it in the fridge for about 30 minutes.

Preheat the oven to 200C / gas mark 6. Cover the tarts with baking paper and fill with baking beans or rice. Blind bake for 15-20 minutes.

Remove the baking beans and bake for another 10 minutes. Remove the tart from the oven and let it cool.

To prepare the filling, in a medium saucepan, combine the cranberries, sugar and orange juice. Bring to boil. Cook, stirring frequently, for 2 to 3 minutes or until berries begin to pop and the mixture thickens.

Spoon the filling evenly into each tart pastry case. Bake for 20-30 minutes or until the filling is bubbly and the pastry is golden-brown.

Remove from the oven and leave to cool.

Serve with freshly whipped cream.
