Since I discovered avocados a few years ago, I could just eat them every day, although usually that’s more like every week or a couple of times a week. And whenever I do eat them I remember about the health benefits they bring, which makes me enjoy them even more.

And I think the guacamole sauce will convince even those not so keen on this fruit. This spicy salsa from Mexico is perfect with fresh vegetables, crisps (try those home-made oven-baked as a healthier option), pitta breads and more. Get creative!

Ingredients

Makes 4 portions

2 ripe avocados
2 tomatoes
5 spring onions, finely chopped
2 fresh chillies, seeded and finely chopped
Juice of 1 lime
Fresh coriander, chopped
Salt and freshly ground black pepper

Crudités suggestions to serve:
Baby corn
Red and green pepper, cut into thin strips
Spring onions, cut into 5-7cm pieces
Baby carrots
Broccoli stems
Asparagus tips
Mangetout
Green beans

Preparation

Peel and stone the avocados. Peel, seed and chop the tomatoes.

Put the avocados in a bowl and mash them with a fork.

Add all the remaining ingredients and mix.

Season well with salt and pepper.

Serve at room temperature with a selection of crudités.
