I love chickpeas! And I love it in a variety of forms. From simple salad, through yummy falafels to hummus dip. So this time let’s look at hummus!

I always hesitate before buying ready-made hummus and study the label carefully to check if the ingredients list is limited just to a few key products.

And actually, it doesn’t take much to prepare it at home, so why not give it a go?
This recipe shows the basic version, which you can always enhance with some fresh herbs, extra lemon, chillies or carmelised onion. The options here are just endless!

Ingredients

Makes 4 portions

225g / 1 can chickpeas
2 garlic cloves, crushed
5 tbsp lemon juice
5 tbsp tahini paste (sesame seed paste)
5 tbsp olive oil
1 tsp cumin
Salt and freshly ground black pepper

Crudités suggestions to serve:
Baby corn
Red and green pepper, cut into thin strips
Spring onions, cut into 5-7cm pieces
Baby carrots
Broccoli stems
Asparagus tips
Mangetout
Green beans

Preparation

Drain the chickpeas, reserve the liquid from the can for later.

Put the chickpeas in a food processor and blend to a smooth paste, adding some liquid from chickpeas if needed to get a smooth consistency.

Add the garlic, tahini paste, olive oil and lemon juice and blend again.

Add the cumin, salt and pepper and mix.

Serve at room temperature with a selection of crudités.
